Plant Sterols
An estimated 50% of the adult population in Northern Europe can be classified as having borderline-high or higher total blood cholesterol concentrations. Clinical evidence has demonstrated that consumption of plant sterols inhibit the intestinal absorption of cholesterol and produce decreases in total blood and LD cholesterol. Reductions in blood cholesterol have also been shown in many population groups besides those with just elevated cholesterol, including Individuals with prior coronary events, diabetics, and in individuals on cholesterol lowering drugs. Plant sterols can be incorporated into a number of food products to add a functional health benefit. These include margarines, cheeses, yoghurts, yoghurt drinks and rye grain breads.
The most effective approach to incorporating plant sterols in foods is through the use of Sterol Esters. They are the ingredient format of choice in adding the functionality of plant sterols into margarines, yoghurts, cheeses and yoghurt drinks.
